Aix\u00ed mateix constitueix un dels motors de l&#8217;economia, amb els diferents alti-baixos pels quals el sector ha anat passant al llarg dels anys.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">El nostre equip de <\/span><a href=\"https:\/\/serhsprojects.com\/ca\/\"><span style=\"font-weight: 400;\">SERHS Projects<\/span><\/a><span style=\"font-weight: 400;\"> neix just fa 35 anys quan l&#8217;hostaleria va iniciar la seva etapa de creixement, posant-nos al capdavant i donant servei als primers socis, en el nostre cas SERHS com a grup.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Vam n\u00e9ixer d&#8217;acord a les tend\u00e8ncies i necessitats espec\u00edfiques del sector en aquell moment.<\/span><\/p>\n<p>&nbsp;<\/p>\n<h3>Tend\u00e8ncies en els inicis de l&#8217;hostaleria i la restauraci\u00f3<\/h3>\n<p><span style=\"font-weight: 400;\">Fa 30 anys els espais i les tend\u00e8ncies en <\/span><a href=\"https:\/\/serhsprojects.com\/ca\/\"><span style=\"font-weight: 400;\">restauraci\u00f3<\/span><\/a><span style=\"font-weight: 400;\"> eren molt diferents a les d&#8217;avui en dia; es demandaven espais oberts, en qu\u00e8 totes les zones eren una mateixa. No imperava la sectoritzaci\u00f3 ni els espais de treball. En l&#8217;execuci\u00f3 de cada servei no es tenien en compte les cru\u00eflles en el proc\u00e9s d&#8217;elaboraci\u00f3, ni el control exhaustiu en la manipulaci\u00f3 d&#8217;aliments i normativa higienicosanit\u00e0ria d&#8217;avui dia.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">A nivell <\/span><a href=\"https:\/\/serhsprojects.com\/ca\/serhs-projects-projectes-a-mida-cuina-bufets-show-cooking\/\"><span style=\"font-weight: 400;\">d&#8217;efici\u00e8ncia i sostenibilitat<\/span><\/a><span style=\"font-weight: 400;\"> energ\u00e8tica,els equips no incorporaven controladors de temperatura que evitessin la fugida d&#8217;energia en cada proc\u00e9s d&#8217;elaboraci\u00f3 del servei de<\/span> <span style=\"font-weight: 400;\">cuina.\u00a0\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Aix\u00ed mateix no es vetllava per la important gesti\u00f3 de tractament de residus, ni els equips que s&#8217;implementaven en cada projecte estaven preparats a aquest efecte.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">En el sector es vivia de costums, una de les quals era la del servei sempre a taula; el comensal havia d&#8217;esperar el poder degustar les del\u00edcies de cada negoci, sempre assegut a taula, sent la relaci\u00f3 cambrer-comensal una de les m\u00e9s consolidades de llavors. Pel que fa als elements decoratius, en els anys 70 era impensable el fet de no comptar amb una \u00fanica vaixella, tots els seus components havien de ser iguals; no es permetia la varietat conceptual en cap negoci, ja que no era sin\u00f2nim d&#8217;estatus i de negoci referent en la seva especialitat.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Per\u00f2 igual que qualsevol sector motor de l&#8217;economia del pa\u00eds, l&#8217;hostaleria ha anat evolucionant a passos de gegant, incorporant metodologies i implantant tend\u00e8ncies per satisfer les necessitats del client cada vegada m\u00e9s exigent.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">30 anys s\u00f3n suficients perqu\u00e8 el sector hagi arribat a con\u00e8ixer al seu client potencial, el seu creixement personal, el desenvolupament dels seus gustos. <\/span><\/p>\n<h3><\/h3>\n<h3>Noves tend\u00e8ncies<\/h3>\n<p><span style=\"font-weight: 400;\">Si abans els principis b\u00e0sics de qualsevol espai de restauraci\u00f3 se sustentaven en la qualitat del menjar, independentment del seu espai i equipament per a la seva execuci\u00f3, avui dia els principis b\u00e0sics de qualsevol negoci d&#8217;hostaleria s\u00f3n:<\/span><\/p>\n<ul>\n<li><b>qualitat del menjar<\/b><\/li>\n<li><b>mecanismes d&#8217;elaboraci\u00f3<\/b><\/li>\n<li><strong><a href=\"http:\/\/www.serhsequipments.com\">equipament<\/a> eficient i sostenible energ\u00e8ticament<\/strong><\/li>\n<li><strong>espai comfortable<\/strong><\/li>\n<li><strong>auto-servei<\/strong><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\"><strong>Els processos d&#8217;elaboraci\u00f3 <\/strong><\/span><span style=\"font-weight: 400;\">a cada <\/span><a href=\"https:\/\/serhsprojects.com\/ca\/serveis-projectes-a-mida-cuina-bufets-show-cooking\/cuines-professionals-per-a-hostaleria-i-restauracio\/\"><span style=\"font-weight: 400;\">espai de cuina<\/span><\/a><span style=\"font-weight: 400;\"> han canviat amb la sectoritzaci\u00f3 i metodologia en els processos de treball i manipulaci\u00f3.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Un altre dels conceptes que en els \u00faltims anys ha entrat a formar part de les noves tend\u00e8ncies en l&#8217;hostaleria, \u00e9s el paper principal que juguen <\/span><b>estalvi i sostenibilitat<\/b><span style=\"font-weight: 400;\">. Avui en dia s&#8217;han convertit en una de les principals exig\u00e8ncies en qualsevol projecte de restauraci\u00f3.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Es disposa d&#8217;equips amb un perfecte equilibri entre <\/span><a href=\"https:\/\/serhsprojects.com\/ca\/proyecto\/cuina-i-bufet-aqua-hotel-bertran-park-lloret-de-mar\/\"><span style=\"font-weight: 400;\">funcionalitat i<\/span><\/a><span style=\"font-weight: 400;\"> sostenibilitat. Avui dia s&#8217;aposta pel desenvolupament d&#8217;equipament eficient que incorpora gasos refrigerants d&#8217;\u00faltima generaci\u00f3, respectuosos amb el medi ambient i amb un alt nivell d&#8217;efici\u00e8ncia energ\u00e8tica. Centrals frigor\u00edfiques que incorporen refrigeraci\u00f3 d&#8217;aigua glicolada. Un sistema que permet una gran disminuci\u00f3 de la c\u00e0rrega de gas refrigerant fluorat necessitada en tot circuit frigor\u00edfic per al correcte funcionament dels equips. Tot aix\u00f2 aportar\u00e0 un cost m\u00e9s baix de manteniment i reparaci\u00f3 dels equips, un major comprom\u00eds mediambiental i un estalvi energ\u00e8tic considerable.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Aix\u00ed mateix, es disposa d&#8217;espais de tractament de residus, com s\u00f3n per exemple, els decantadors de greix, que reforcen la nostra aposta per la sostenibilitat del planeta.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">La <\/span><b>decoraci\u00f3 i l&#8217;est\u00e8tica<\/b><\/p>\n<p><span style=\"font-weight: 400;\">\u00e9s un altre dels conceptes que tamb\u00e9 ha evolucionat amb el pas del temps. Avui dia l&#8217;originalitat, el conceptualisme i la varietat de materials fan que un negoci pugui disposar de m\u00e9s o menys popularitat.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Un exemple el trobem en els <\/span><a href=\"https:\/\/serhsprojects.com\/ca\/serveis-projectes-a-mida-cuina-bufets-show-cooking\/bufets-per-a-hostaleria-i-restauracio\/\"><b>bufets<\/b><span style=\"font-weight: 400;\">,<\/span><\/a><span style=\"font-weight: 400;\">en qu\u00e8 el disseny i materials que s&#8217;implementen en la seva projecci\u00f3 s\u00f3n molt diferents als de fa m\u00e9s de 30 anys, aix\u00ed com l&#8217;\u00e0mplia varietat i zona d&#8217;exposici\u00f3 dels aliments que s&#8217;habilita en cada un d&#8217;ells.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">A m\u00e9s, segons la nostra experi\u00e8ncia com a dissenyadors i executors de projectes de restauraci\u00f3, veiem que cada vegada m\u00e9s s\u00f3n m\u00e9s freq\u00fcents els projectes de cuines obertes a la vista, o tamb\u00e9 anomenats<\/span><a href=\"https:\/\/serhsprojects.com\/ca\/serveis-projectes-a-mida-cuina-bufets-show-cooking\/show-cooking-per-a-hostaleria-i-restauracio\/\"> <b>cuina en viu<\/b><\/a><span style=\"font-weight: 400;\">, que ens permeten seguir amb la tend\u00e8ncia del nou concepte del <\/span><b>mercaurant<\/b><span style=\"font-weight: 400;\">. Aportar sensaci\u00f3 de transpar\u00e8ncia i higiene en la manipulaci\u00f3 d&#8217;aliments, a m\u00e9s de permetre veure als comensals el proc\u00e9s complet de preparaci\u00f3 i producci\u00f3 dels plats demandats, suposant a m\u00e9s un espectacle culinari durant l&#8217;espera del seu men\u00fa.
