{"id":26318,"date":"2020-10-19T07:26:42","date_gmt":"2020-10-19T07:26:42","guid":{"rendered":"https:\/\/serhsprojects.com\/cuines-industrials-en-hospitals-i-residencies-geriatriques\/"},"modified":"2023-05-02T12:18:26","modified_gmt":"2023-05-02T11:18:26","slug":"bufets-de-restauracio-adaptats-a-la-nova-realitat","status":"publish","type":"post","link":"https:\/\/serhsprojects.com\/ca\/bufets-de-restauracio-adaptats-a-la-nova-realitat\/","title":{"rendered":"Bufets de restauraci\u00f3 adaptats a la nova realitat"},"content":{"rendered":"<p>Avui en dia ens trobem davant d&#8217;una realitat capa\u00e7 de desarmar les bases sostenibles de tot negoci, sigui quin sigui el seu sector, tot comportament social i, en conseq\u00fc\u00e8ncia, tota actitud amb l&#8217;entorn que ens envolta.<\/p>\n<p>De tot aix\u00f2 serem capa\u00e7os d&#8217;implementar en el nostre dia a dia all\u00f2 que realment ens permeti avan\u00e7ar en el nou model social que s&#8217;instauri.<\/p>\n<p>Tot aix\u00f2 repercutir\u00e0 en els nostres h\u00e0bits i tend\u00e8ncies.<\/p>\n<p><b>Canvi de paradigma<\/b><\/p>\n<p>Un exemple el trobem en el sector de la restauraci\u00f3. \u00c9s cert que fruit de la pand\u00e8mia actual, el bufet ha estat estigmatitzat per la gran aflu\u00e8ncia de p\u00fablic que per concepte sempre ha implicat. Per als amants del menjar, un bufet que &#8220;entr\u00e9s pels ulls&#8221; amb la disposici\u00f3 de tot el menjar a la vista, era sin\u00f2nim d&#8217;una reserva gaireb\u00e9 garantida. Ara b\u00e9, aix\u00f2 ha canviat, i el que abans es veia com el &#8220;gaudi&#8221; ara es reflecteix com un &#8220;perill&#8221; en la ment del consumidor.<\/p>\n<p>Tot i que la normativa actual en l&#8217;\u00fas del\u00a0<a href=\"https:\/\/serhsprojects.com\/ca\/serveis-projectes-a-mida-cuina-bufets-show-cooking\/bufets-per-a-hostaleria-i-restauracio\/\">buffet<\/a> \u00e9s molt diversa, \u00e9s cert que hem de ser capa\u00e7os de <a href=\"https:\/\/serhsprojects.com\/ca\/serveis-projectes-a-mida-cuina-bufets-show-cooking\/bufets-per-a-hostaleria-i-restauracio\/\"><b>reinventar<\/b><\/a> el seu concepte i acostar-nos al seu futur m\u00e9s pr\u00f2xim. Vol dir que hem de deixar de visitar els bufets? La resposta \u00e9s no. Hem de seguir gaudint d&#8217;ells sempre amb el ferm comprom\u00eds de complir amb la normativa de seguretat i higiene establerta, tant per part de l&#8217;establiment com per part de l&#8217;usuari.<\/p>\n<p><img decoding=\"async\" class=\"alignnone wp-image-3736 size-full lazyload\" data-src=\"https:\/\/serhsprojects.com\/wp-content\/uploads\/2018\/10\/montemar_09.jpg\" alt=\"Buffet libre blanco Hotel Montemar\" width=\"800\" height=\"534\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" style=\"--smush-placeholder-width: 800px; --smush-placeholder-aspect-ratio: 800\/534;\" \/><\/p>\n<p>El punt de m\u00e9s afectaci\u00f3 \u00e9s el de l&#8217;autoservei, ja que aquest passa a ser servit pel mateix personal de l&#8217;hotel, podent protegir d&#8217;aquesta manera l&#8217;exposici\u00f3 dels aliments davant els comensals.<\/p>\n<h3>Quines s\u00f3n les mesures fonamentals que compleix tot <a href=\"https:\/\/serhsprojects.com\/ca\/serveis-projectes-a-mida-cuina-bufets-show-cooking\/bufets-per-a-hostaleria-i-restauracio\/\">bufet<\/a>\u00a0i que generen una acceptaci\u00f3 positiva per part dels comensals?<\/h3>\n<p>Hem de diferenciar entre <strong>elements de protecci\u00f3<\/strong> i <strong>metodologia de treball<\/strong> a l&#8217;espai <span style=\"font-weight: 400;\">del bufet<\/span>:<\/p>\n<p><b>Elements de protecci\u00f3<\/b><\/p>\n<ul>\n<li>Els bufets disposen a la zona d&#8217;acc\u00e9s de dispensadors amb gel hidroalcoh\u00f2lic per a la correcta desinfecci\u00f3 de mans dels clients. Hem de ser conscients que aquest gest s&#8217;est\u00e0 convertint en un h\u00e0bit diari per a tots, de manera que a part de transmetre als comensals la seguretat de l&#8217;establiment, no s&#8217;oposaran a tal acci\u00f3.<\/li>\n<li>Tot el personal de servei est\u00e0 equipat amb tots els EPI (elements de protecci\u00f3 com s\u00f3n gorres, guants, m\u00e0scares) que la normativa estableix d&#8217;obligat compliment per a accedir a al lloc de treball, aix\u00ed com el nombre de persones que formen l&#8217;equip de bufet.<\/li>\n<li>Se situa cartelleria i senyalitzaci\u00f3 en tot l&#8217;espai amb informaci\u00f3 de pautes d&#8217;higiene i desinfecci\u00f3 a manera de recordatori per als clients<\/li>\n<\/ul>\n<p><b>Metodologia de treball<\/b><\/p>\n<ul>\n<li>El servei de bufet es pot oferir sota dues modalitats: que siguin els propis equips els encarregats de servir els plats als comensals, o b\u00e9 disposar de racions monodosi que evitin la manipulaci\u00f3 de tota l&#8217;exposici\u00f3 dels aliments.<\/li>\n<li>S&#8217;indica degudament la dist\u00e0ncia de seguretat en els torns d&#8217;espera que s&#8217;han de respectar entre comensals. Aix\u00ed mateix, aquests hauran d&#8217;esperar el seu torn fins a ser atesos i ubicats a la taula que anteriorment haur\u00e0 estat desinfectada correctament entre usos de diferents clients.<\/li>\n<li>Tot el mobiliari queda disposat comptant amb la dist\u00e0ncia de seguretat que s&#8217;especifica en la normativa. Per aquest motiu, els torns i reserves d&#8217;hores seran cada vegada m\u00e9s usuals en aquests espais de restauraci\u00f3<span style=\"font-weight: 400;\">.<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\">En un primer moment, totes aquestes adaptacions a contemplar poden suposar un increment de cost de personal, d&#8217;infraestructura i de materials. Trobem el seu origen en la cura i selecci\u00f3 dels aliments i quantitats per part dels comensals a l&#8217;hora de dinar, en detriment d&#8217;una dieta sana i equilibrada. El format monodosi permet:\n<ul>\n<li style=\"font-weight: 400;\">evitar el risc de concentraci\u00f3 de grans aglomeracions.<\/li>\n<li style=\"font-weight: 400;\">reduir i pr\u00e0cticament eliminar la manipulaci\u00f3 i intervenci\u00f3 del comensal en tot moment. Els emplatats monodosi estan tapats i amb acc\u00e9s a trav\u00e9s de pantalla protectora, aix\u00ed com un itinerari definit que garanteix la dist\u00e0ncia de seguretat entre cada comensal.
