El xef pot assenyalar les necessitats de la instal\u00b7laci\u00f3, l&#8217;organitzaci\u00f3 del recorregut i les tend\u00e8ncies de la zona. Els dissenyadors poden organitzar l&#8217;espai d&#8217;acord amb les normes de seguretat i higiene, l&#8217;eliminaci\u00f3 de deixalles i els requisits de mida m\u00ednima, tenint sempre en compte els criteris de <a href=\"https:\/\/serhsprojects.com\/ca\/ecoprojects-projectes-d-hostaleria-sostenibles\/\"><strong>sostenibilitat i estalvi energ\u00e8tic<\/strong><\/a>.<\/p>\n<h3>Com dissenyar una cuina eficient per a un restaurant?<\/h3>\n<p>Les refer\u00e8ncies normatives que s&#8217;han de tenir absolutament en compte a l&#8217;hora de redactar dissenys de cuines de restaurants estan relacionades principalment amb la higiene i conservaci\u00f3 d&#8217;aliments per garantir la seguretat aliment\u00e0ria de client. Per tant, aquests est\u00e0ndards tamb\u00e9 determinen el disseny arquitect\u00f2nic i l&#8217;organitzaci\u00f3 espacial de la cuina del restaurant perqu\u00e8 sigui el m\u00e9s eficient possible. En aquest cas, s&#8217;han de considerar diferents regulacions nacionals i fins i tot locals en l&#8217;etapa de disseny i implementaci\u00f3 de la cuina.<\/p>\n<p>Pel que fa a l&#8217;HACCP (an\u00e0lisi de perills i punts cr\u00edtics de control), no nom\u00e9s aix\u00f2, l&#8217;est\u00e0ndard de normes de refer\u00e8ncia a Europa s\u00f3n les redactades en el <a href=\"https:\/\/eur-lex.europa.eu\/legal-content\/ES\/TXT\/?uri=CELEX%3A32004R0852\"><strong>Reglament CE n\u00fam. 852 de 29 d&#8217;abril del 2004<\/strong><\/a>.<\/p>\n<h3>Les 6 regles per al disseny d&#8217;una cuina eficient per a restaurant<\/h3>\n<p>La cuina \u00e9s una \u00e0rea dedicada a la preparaci\u00f3 d&#8217;aliments, per tant, ha de tenir algunes caracter\u00edstiques perqu\u00e8 sigui segura per als treballadors i per a protegir la seguretat aliment\u00e0ria dels consumidors.<\/p>\n<p>La mida adequada i la ubicaci\u00f3 correcta a la distribuci\u00f3 del restaurant comporten l&#8217;optimitzaci\u00f3 de l&#8217;organitzaci\u00f3 per la seva efici\u00e8ncia i la seguretat higi\u00e8nica dels processos. A m\u00e9s, garanteix el recorregut correcte dels aliments, des de les mat\u00e8ries primeres fins al subministrament dels plats preparats, estalviant recursos i temps.<\/p>\n<p>Per aix\u00f2, el disseny de la cuina ha de respectar l&#8217;avan\u00e7 en el cicle de producci\u00f3, de manera que la forma en qu\u00e8 es construeix una cuina professional ha d&#8217;evitar les rutes de retorn relacionades amb els procediments d&#8217;higiene i processament d&#8217;aliments.<\/p>\n<blockquote style=\"font-size: 80%; font-weight: bold;\"><p>acc\u00e9s de la mat\u00e8ria primera&gt; preparaci\u00f3 pr\u00e8via a la cocci\u00f3&gt; cocci\u00f3&gt; guarnici\u00f3&gt; servei<\/p><\/blockquote>\n<p>Sempre s&#8217;ha de determinar l&#8217;\u00e0rea per al rentat i processament preliminar de peix i verdures. Depenent de la mida de la cuina, aquestes \u00e0rees poden ser habitacions separades de la resta de la cuina, amb panells rentables o \u00e0rees amb funcions clares. \u00c9s preferible la forma d&#8217;una estructura quadrada o equivalent perqu\u00e8 no hi hagi un espai estret que sigui dif\u00edcil d&#8217;esterilitzar.<\/p>\n<h4>1. El disseny de la cuina del restaurant: la mida adequada<\/h4>\n<ul>\n<li>L&#8217;\u00e0rea m\u00ednima de la cuina que pot servir fins a 50 comensals, sense comptar amb c\u00e0meres ni magatzem, ha de ser de com a m\u00ednim 20 metres quadrats, inclosa l&#8217;\u00e0rea de rentat.\u00a0 Per capacitats m\u00e9s altes, s&#8217;han de calcular 0,5 metres quadrats per seient.<\/li>\n<li>Els mobles s&#8217;han de col\u00b7locar de manera que es puguin netejar i desinfectar.<\/li>\n<\/ul>\n<h4><strong>2. Il\u00b7luminaci\u00f3 i ventilaci\u00f3<\/strong><\/h4>\n<ul>\n<li>Hem de tenir en compte que la superf\u00edcie d&#8217;il\u00b7luminaci\u00f3 i ventilaci\u00f3 han de comunicar directament amb l&#8217;exterior.<\/li>\n<li>Totes les obertures han de tenir retines anti-insectes i anti-rosegadors.<\/li>\n<li>La cuina ha de tenir campanes extractores que envi\u00efn el fum a l&#8217;exterior.<\/li>\n<\/ul>\n<h4><strong>3. Pavimentacions i parets<\/strong><\/h4>\n<ul>\n<li>El pis ha de ser en un material llis, rentable i impermeable, amb cantonades arrodonides i vores de color clar i inclinat cap a un canal sif\u00f3 amb una reixa de malla fina.<\/li>\n<li>Les parets han de ser llises, rentables i f\u00e0cils d&#8217;esterilitzar, en colors clars amb cantonades arrodonides i revestides amb rajoles o esmaltades amb resines epoxy a una dist\u00e0ncia de 2 cm de el pis.<\/li>\n<li>A la cuina es poden connectar espais accessoris com rebosts, \u00e0rea de rentat, \u00e0rea de cambra freda i similars, que es tindran en compte i s&#8217;agregaran a la meitat de la seva superf\u00edcie en el c\u00e0lcul del par\u00e0metre 0. 5 m\u00b2 \/ lloc a qu\u00e8 ens hem referit, a prop\u00f2sit de la mida m\u00ednima de la cuina.<\/li>\n<\/ul>\n<h4>4. Rebost i magatzem<\/h4>\n<ul>\n<li>El rebost ha d&#8217;estar situat en una zona independent; \u00e9s possible tamb\u00e9 al soterrani, sempre que sigui salubre i tingui l&#8217;al\u00e7ada suficient.<\/li>\n<li>Ha de ser un lloc no accessible per al p\u00fablic, on no es pugui realitzar cap manipulaci\u00f3 dels aliments.
