Si disposem d&#8217;un negoci d&#8217;hostaleria o ens estem pensant en obrir-ne un de nou, haurem de complir els <strong>requisits m\u00ednims<\/strong> establerts a la normativa d&#8217;extracci\u00f3 de fums vigent.<\/p>\n<h3>Els cinc punts a tenir en compte per a una correcta extracci\u00f3 de fums<\/h3>\n<p>1&#xfe0f;&#x20e3; <strong>Les dimensions de la campana extractora<\/strong><\/p>\n<p>Sens dubte, l&#8217;element m\u00e9s important per a l&#8217;<strong>extracci\u00f3 de l&#8217;aire contaminat<\/strong> \u00e9s la campana. La seva estructura, s&#8217;haur\u00e0 d&#8217;instal\u00b7lar a <strong>2 metres del terra<\/strong>, per poder evitar col\u00b7lisions dels treballadors de la cuina, quedant una dist\u00e0ncia entre la resist\u00e8ncia i el filtre d&#8217;<strong>1,20 m<\/strong>.<\/p>\n<p>2&#xfe0f;&#x20e3; <strong>Sistema d&#8217;extinci\u00f3 d&#8217;incendis<\/strong><\/p>\n<p>El <strong>sistema autom\u00e0tic d&#8217;extinci\u00f3 d&#8217;incendis<\/strong> no \u00e9s obligatori per a totes les unitats de cocci\u00f3. La normativa vigent obliga a la seva instal\u00b7laci\u00f3 en funci\u00f3 de la pot\u00e8ncia a KWS de qu\u00e8 disposin els fogons de l&#8217;espai de cuina.<\/p>\n<p>3&#xfe0f;&#x20e3; <strong>Caix\u00f3<\/strong><strong> de ventilaci\u00f3\u00a0<\/strong><\/p>\n<p>Si ens hi fixem, els ventiladors de les<strong> campanes extractores<\/strong> tenen forma de caixa. El conjunt de ventiladors i motor estan encaixats a l&#8217;estructura en forma de calaix, el qual haur\u00e0 de ser totalment <strong>ign\u00edfug<\/strong> i disposar d&#8217;entrada i sortida d&#8217;aire. Aquest pot transportar el fum cap a l&#8217;exterior a uns 400 \u00ba durant m\u00e9s de dues hores. Es tracta d&#8217;un ventilador F-400 homologat, el qual permet evitar incendis a la zona i contribueix a una gesti\u00f3 correcta de l&#8217;acumulaci\u00f3 de gasos.<\/p>\n<p>4&#xfe0f;&#x20e3; <strong>Di\u00e0metre del cabal d&#8217;extracci\u00f3<\/strong><\/p>\n<p>Tant el di\u00e0metre del sistema com el flux d&#8217;aire de l&#8217;extracci\u00f3 s&#8217;han d&#8217;aplicar a:<\/p>\n<ul>\n<li>Grand\u00e0ria de la campana extractora<\/li>\n<li>Recorregut dels fums al circuit<\/li>\n<li>Pot\u00e8ncia t\u00e8rmica de l&#8217;equipament de la cuina<\/li>\n<li>Nombre de costats tancats de l&#8217;estructura<\/li>\n<\/ul>\n<p>5&#xfe0f;&#x20e3; <strong>Tra\u00e7at dels conductes d&#8217;extracci\u00f3<\/strong><\/p>\n<p>La traject\u00f2ria del <strong>sistema d&#8217;extracci\u00f3<\/strong> ha de tenir el m\u00ednim nombre de colzes possibles, ja que aquests limiten el flux continu de l&#8217;aire a l&#8217;interior dels conductes. Per evitar la instal\u00b7laci\u00f3 d&#8217;aquests elements angulars, es recomana l&#8217;\u00fas de <strong>seccions circulars<\/strong>, fet que ens garanteix <strong>menors p\u00e8rdues<\/strong> de cabal per fricci\u00f3, i contribueix a un <strong>millor a\u00efllament ac\u00fastic<\/strong>.<\/p>\n<p>Tamb\u00e9 n&#8217;haurem d&#8217;optimitzar el rendiment limitant-ne al m\u00e0xim la longitud. A m\u00e9s dist\u00e0ncia de recorregut, menys rendiment ens proporcionar\u00e0 l&#8217;estructura.<\/p>\n<p>Un altre aspecte important que cal tenir en compte ser\u00e0 la <strong>dist\u00e0ncia m\u00ednima<\/strong> que els sistemes d&#8217;extracci\u00f3 hauran de mantenir respecte a balcons, finestres o patis ser\u00e0 d&#8217;<strong>1,5 metres<\/strong>. Aix\u00f2 fa que davant l&#8217;obertura de <strong>nous establiments de restauraci\u00f3,<\/strong> sigui imprescindible dur a terme una s\u00e8rie de tr\u00e0mits. En cas que aquest no disposi d&#8217;un<strong> sistema d&#8217;extracci\u00f3 propi<\/strong>, s&#8217;haur\u00e0 de comptar amb consentiment de la comunitat de propietaris per fer un tra\u00e7at transversal al pati interior de l&#8217;edifici.<\/p>\n<p>Val a dir que la pres\u00e8ncia d&#8217;un sistema d&#8217;extracci\u00f3 no garanteix el compliment de la normativa vigent exigida, per la qual cosa caldr\u00e0 consultar amb un professional per verificar aquest compliment.<\/p>\n<p>A la majoria d&#8217;edificis de nova construcci\u00f3, ja s&#8217;hi instal\u00b7la un<strong> sistema de canalitzacions<\/strong>, cosa que facilita la posterior integraci\u00f3 amb qualsevol <strong>estructura d&#8217;extracci\u00f3 de fums<\/strong>.<\/p>\n<p>Un altre factor de gran import\u00e0ncia en aquest tipus d&#8217;instal\u00b7lacions \u00e9s el de la <strong>neteja<\/strong>, ja que fer manteniments regularment permetr\u00e0 allargar la vida \u00fatil de la <strong>campana<\/strong>, dels <strong>filtres<\/strong> d&#8217;acer inoxidable i dels conductes d&#8217;extracci\u00f3.<\/p>\n<p>Amb una neteja correcta evitarem un dels riscos m\u00e9s importants a les <strong><a href=\"https:\/\/serhsprojects.com\/ca\/serveis-projectes-a-mida-cuina-bufets-show-cooking\/cuines-professionals-per-a-hostaleria-i-restauracio-2\/\">cuines industrials<\/a><\/strong>, el dels incendis provocats per l&#8217;acumulaci\u00f3 de greix. Uns <strong>bons h\u00e0bits de sanejament<\/strong>, ens permetr\u00e0 tamb\u00e9 evitar un altre risc important, com \u00e9s el de la proliferaci\u00f3 de bacteris, fonts d&#8217;infecci\u00f3 i males olors.<\/p>\n<p>Els per\u00edodes de neteja recomanats per a una cuina industrial s\u00f3n:<\/p>\n<ul>\n<li><strong>Filtres<\/strong>, un cop per setmana, com a m\u00ednim.<\/li>\n<li><strong>Safates recull greixos<\/strong>, una neteja per setmana<\/li>\n<li><strong>Part interna de la campana extractora<\/strong>, neteja anual. Com a m\u00ednim, haurem de fer una completa neteja de tota la part interna de la instal\u00b7laci\u00f3. Aquest ser\u00e0 el per\u00edode m\u00ednim requerit per a l&#8217;obtenci\u00f3 del certificat anual que ens proporcionar\u00e0 l&#8217;empresa de neteja.
